Fidelis is much more than a restaurant: it's a life story, a love story, a family story.

Opened in 2019 in the heart of Saint-Malo, Fidelis is a lifelong project for Solène and Ronan Mahé, two passionate Bretons, united in life and in the kitchen. They met at Pen Rock, behind the scenes of a Michelin-starred restaurant, she in the dining room, he in the kitchen. They have been inseparable ever since.

From Paris to New York, via Saint-Barth, their journeys have been rich in experience and demanding standards. Ronan trained with the greatest (Guy Savoy, Daniel Boulud, Le Jules Verne, etc.), while Solène developed her sense of hospitality and rhythm in the dining room. They learned, traveled, tasted, and shared.

And then one day, the desire to return to their roots, to settle down in Brittany to build their own house, one that reflects their personality. With the arrival of their daughter, everything makes sense.

Fidelis was born, as if it were obvious.
